Neiman Marcus Cookies

One of the things on my Summer Bucket List was to bake for neighbours & friends... so last week my sister and I whipped up some Neiman Marcus cookies to pack up and deliver! My sister likes to call these 'everything cookies' because they really are a little bit of everything - chocolate chips, grated chocolate, oatmeal, nuts!! I found this recipe in my family's recipe box, but I have no clue where it originally came from!
Here is how I do Neiman Marcus Cookies:
Start by creaming together 2 cups of softened butter, 2 cups of brown sugar and 2 cups of white sugar in a large mixing bowl.
Then, mix in 4 eggs and 2 teaspoons of vanilla.
When the wet ingredients are well combined, stir in 4 cups of flour, 2 teaspoons of baking soda, 2 teaspoons of baking powder and 1 teaspoon of salt.
You can notice in my pictures that I switched to a wooden spoon once my batter started getting a little too much for my usual spatula trick! I still recommend using a spatula to scrape down the sides of the bowl & make sure everything is getting incorporated but this batter is serious and my spatula just wasn't cutting it! Note also that this recipe make 105-110 cookies (!!!) so the wooden spoon makes working with this amount of batter a little easier.

Once the flour/salt/baking soda is mixed in, stir in 5 cups of oats.


Next, add in 2 cups of chopped nuts (I used walnuts), 1 1/2 of semi-sweet chocolate chips and 18 oz. of grated milk chocolate (a regular sized Hershey bar is 6oz). The grating chocolate part is no fun - it's a lot of chocolate that it breaks easily and melts :( Luckily, I had a little helper in Christmas PJ's who was willing to grate all of the chocolate in return for some pieces of chocolate - Score! 
Line a baking sheet with parchment paper (this is optional, but it reduces mess) and place heaping tablespoons of cookie dough about 2 inches apart across the cookie sheet. These cookies do not roll well, so I suggest filling a heaping tablespoon and dropping them onto the baking sheet using your fingers or a small spatula.
Pre-heat the oven to 375°F and bake the cookies for 10-12 minutes. Move the cookies to a cooling rack once they are cooked and allow them to cool before eating. I have made this recipe several times and it usually makes between 105 and 110 cookies, if you do not want to be rolling out that many cookies, I suggest halving or even quartering the recipe.

ingredients
2 cups butter, softened
2 cups brown sugar
2 cups white sugar
4 eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
5 cups oats
1 1/2 cups semi-sweet chocolate chips
18 oz grated milk chocolate
2 cups chopped nuts of your choice (I use walnuts & this can be increased to 3 cups) 

directions
1. Cream together softened butter, brown sugar and white sugar in large mixing bowl. Mix in eggs and vanilla extract and stir until well combined.
2. Add flour, baking soda, baking powder and salt to the mixing bowl and stir until the dry ingredients are incorporated. 
3. Mix in oats, chocolate chips, grated chocolate and your choice of nuts.
4. Pre-heat the oven to 375°F and bake the cookies for 10-12 minutes until they are golden brown on the edges.
