Oatmeal Chocolate Chip Cookies

I have blogged about how I make these Oatmeal cookies before but sometimes I like to add a little chocolate to the recipe and here is how I do it:

Start by creaming together 1 cup of softened butter, 1 cup of brown sugar and 1 cup of white sugar in a medium mixing bowl. When the butter & sugars are well combined, mix in 2 eggs (1 at a time) and 1 teaspoon of vanilla extract.
Then, stir in 2 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of salt and 1 teaspoon of ground cinnamon.
Mix in 3 cups of quick oats.
You could choose to not add in chocolate chips - these cookies are delicious either way but if you would like chocolate chips, mix in 2 cups of semi-sweet chocolate chips.
Using a tablespoon, drop balls of dough about an inch and a half or two inches apart along a baking sheet lined with parchment paper. Using a fork, flatten the cookies a little bit before putting them into the oven.
Bake the cookies for 10-12 minutes at 375 degrees Fahrenheit. Allow the cookies to cool on a wire rack before serving.
OATMEAL CHOCOLATE CHIP COOKIES
ingredients
1 cups butter, softened
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
3 cups quick oats
2 cups semi-sweet chocolate chips

Directions
1. In a medium bowl, cream together softened butter, white sugar, brown sugar, eggs (1 at a time) and vanilla.
2. Mix flour, baking soda, salt and cinnamon.
3. Fold in quick oats and semi-sweet chocolate chips.
4. Cover and refrigerate for at least one hour (I skip this step).
5. Cover a baking sheet with parchment paper. Place a tablespoons of dough on baking sheet and flatten with a fork. The balls of dough should be 1 1/2 - 2 inches apart.
6. Bake at 375°F for 10-12 minutes. Cool on a cooling rack before serving.
