Friday Favorites: Happy Mother's Day!

This weekend is another crazy one - it's packed right to the brim! I don't remember May ever being so busy, but I am here to confirm that May just might be the craziest month of the year! We have some Mother's day fun going on this weekend but we also have a bridal shower to attend. I'm pretty sure I'm going to need another weekend when Monday rolls around! Here is a little round up of my favorite parts of this week (spoiler alert: I talk about food a lot! But this is mostly a foodie blog so that's ok, right?).

1. My aunt and uncle served this salad when we visited them recently and it's all I've wanted since! We've already made it twice and I just can't get enough! The base is bitter greens - kale, swiss chard and radicchio and then it's topped with caramelized pear, candied walnuts and the most delicious olive oil dressing! The caramelized pears are heavenly and they pair so nicely with the bitter greens! I'm hoping to get a recipe for this up a.s.a.p.! In the mean time, you may be able to find it with a simple Google search, I know it's a Whole30 recipe!
2. Have you had enough of these!? I know I talk about this Snicker's Pie all the time, but they really are that good! I made the pie version for Easter dinner and I made them into bars to serve at my tea party! The switch was so simple and it made serving this dessert even easier! If you haven't tried these yet, I recommend trying them like today! Ha! I'm kidding, but they are easy as can be and they taste so good (but they're actually healthy!). Especially if you have any food sensitivities (gluten, dairy, eggs, sugar...), this makes such a great dessert!
3. On Tuesday, I shared all about my evening at Stars on Ice and I raved about Tessa and Scott's Moulin Rouge free skate! I raved but I didn't have any footage/pictures to share because I just sat there and soaked it all in! Well, good news! My friend, Erica took a couple videos and I have since found their skate from Montreal on YouTube! This skate was incredible at the Olympics and I love it just as much every time I watch it! I don't think I could ever grow tired of this skate, they bring such magic to the ice!

I should mention that the arena went wild while these skated their Moulin Rouge piece - I mean, like concert loud! It was deafening! And Erica might be able to inform you otherwise but I don't think I contributed to the screaming at all during the Moulin Rouge skate! I think I just sat there in shock!
4. Dancing with the Stars started a couple of weeks ago with a short athletes season and I am loving it! I am especially loving Adam Rippon! I love that he is a skater and I love that he is totally embracing this experience! He is such a great dancer and I honestly look forward to what he'll do next ever week! I have to say, I'm also loving Witney and Chris Mazdzer! The Bean always asks for the highlights the day after and I always end up talking about Adam and Chris! They have absolutely stolen this season for me!
5. My crew had Butter Chickpeas for dinner on Wednesday night and it was delicious! We discovered this recipe about a year ago and we still love it just as much! This recipe is so simple to make and it packs a whole bunch of flavor! On top of this, it's totally allergen friendly (it's gluten free and vegan!) so that makes this recipe a big winner in my books!
