1. I discovered this blog this week and I am quite literally jumping up and down about it! I am often able to find great recipes that are gluten free then I make adjustments to make them dairy and egg free or vice versa but this blog does it all! The Unconventional Baker is run by a Canadian writer named Audrey Snowe and as of this week, I might be her biggest fan! I have yet to try one of her recipes but I have pinned so many and I can't wait to try some out!
2. And speaking of fun gluten free, dairy free, egg free and refined sugar free treats - This Strawberry Rhubarb Crumble! I made this crumble on Wednesday for my family and it was a big hit! We love all things strawberry rhubarb around here and this crumble did not disappoint! This strawberry rhubarb crumble makes such a perfect summer dessert. You can find the recipe HERE.
3. On Wednesday night, we had Strawberry Rhubarb Crumble for dessert but what did we have for dinner? This yummy quinoa bruschetta casserole! As usual, this recipe is gluten free and vegan and I am so looking forward to sharing it next week! I had the toughest time deciding which to share first - the crumble or this casserole. I decided on dessert first (because isn't everything better that way?) and the casserole will come next week! This quinoa bruschetta casserole is simple to put together but it packs so much flavor! The recipe will be up on Tuesday!
4. I have been loving all the summer fruit lately! I typically snack on carrots and hummus during the day but I was more drawn to fruit this week! We are really starting to get some summer heat around here and I love snacking on nectarines and berries when the weather gets hot. When I sat down to do a little blog work yesterday, this is what I was munching on. Nectarines always remind of the beach so I've been craving our summer beach getaway since eating nectarines! I am so ready for all the summer fun that's on its way!
5. And with the beach on my mind, I always think of this girl as well (because she's my favorite beach friend!)! Hannah has been in Poland for 10 months and she is coming home in just over two weeks! I don't want to say that I've been wishing time away (in fact, I've been working hard to do the opposite!) but 10 months is way too long and I am so ready for my sweet friend to come home already!
