Churros

Last week, I made churros!! I found this recipe at Everyday Dishes, you can find the original recipe here! I love that this recipe is baked instead of deep fried!
Start by putting 1 cup of water, 2 tablespoons of granulated sugar, 1/2 teaspoon of salt and 1/2 cup of butter in a medium saucepan and cooking it over medium heat. Once this mixture is melted add in the flour.
I had the flour ready before I started cooking, because once things get going, all of the ingredients need to be added pretty quickly.
Stir in the flour and once it's well incorporated into the batter continue stirring over medium-heat for about 30 seconds.
When the dough has been stirred over medium heat for 30 seconds, remove the pot from the stove.
Add 3 eggs to the batter. The eggs need to be added one at a time because they need to be stirred in right away before they can cook and congeal separate from the rest of the batter. So, crack the egg right into the batter and mix it in right away. Once it's all stirred in, crack the other egg and repeat this process for the 3rd egg. After the eggs are mixed in, stir in 1 teaspoon of vanilla extract.

Once all of the ingredients are mixed in, pour the batter into a piping bag with a larger star tip screwed on.

Pipe strips of batter onto a parchment paper lined baking sheet. The churros could be any size you want the to be. I made mine to be about the size of my hand so they were easier to coat in cinnamon sugar later on.
Bake the churros for 22-25 minutes at 350° F until they are golden brown. Once they are cooked, remove them from the oven and let them cool on a cooling rack.

When the churros are cool enough to handle, brush some melted butter on them and then sprinkle them with some cinnamon sugar. I make my cinnamon sugar by mixing 1/4 cup of granulated sugar and 1/2 teaspoon of cinnamon. My family also tried a few churros with some Nutella spread on - you culd top these with any of your favorite things!
