Vegan Ice Cream

When I title these posts, I have the hardest time decided what to include. Sometimes I feel like I go on for ever with gluten free, vegan, dairy free, refined sugar free... At this point most all of the recipes that I share will be gluten free, dairy free, egg free and refined sugar free (sometimes they'll be vegan too!). So today, we're talking ice cream but this ice cream is avocado and coconut based, so there is no dairy in it! This ice cream is vegan (so dairy free & egg free) and refined sugar free!

Start by adding 1 1/2 pitted avocados to the bowl of the food processor.
Blend the avocados together and add in 1 can of coconut cream (either actual coconut cream or coconut creme separated from refrigerated coconut milk).
Add in 1/2 cup of maple syrup and 1/4 teaspoon of peppermint extract. Process everything together. It shouldn't take long for the mixture to get very smooth.


Transfer the blended mixture to a mixing bowl and add in 1/4 cup of vegan chocolate chips.
Once the chocolate chips are mixed in, use a spatula to transfer the ice cream to a container. We have this special ice cream container so I used that, but any container will do just fine.
Put the ice cream in the freezer and leave it to freeze overnight before you enjoy it! How easy is that? Such a quick treat to throw together and it is so good! The taste and texture are different from real ice cream, but I found this really easy to get used to.

VEGAN ICE CREAM
serves 4-6 people

ingredients
1 1//2 avocados
1 can coconut cream (either a can of coconut cream or the cream from separated coconut milk when refrigerated)
1/2 cup maple syrup
1/4 teaspoon peppermint extract
5 Tablespoons vegan chocolate chips

directions
1. process the avocados, coconut cream, maple syrup and peppermint extract together in a food processor.
2. Transfer the mixture from the food processor to a mixing bowl. Mix in the chocolate chips.
3. Use a spatula to transfer the ice cream to a container. Seal the container and leave it to freeze in the freezer overnight.
