Spinach & Bacon Quiche

Yesterday, I was watching Gilmore Girls (because that's my absolute favorite thing to do!) and Sookie made quiche. Well, that quiche was something powerful because I paused the episode and made quiche for dinner. I have never made quiche before but I was excited to find out that it was so easy to make and the result was delish! I found this recipe on The Kurtz Corner - you can find it HERE.
Start by making a pie crust - add 1 1/4 cup of all-purpose flour, 1/2 teaspoon of salt and 1 tablespoon of granulated sugar to a medium mixing bowl.
*You could use store bought pie crust if you prefer!

When the dry ingredients are combined, use a fork to press in 6 tablespoons of chilled butter, cubed and 1/4 cup of chilled vegetable shortening.
Add in 2 tablespoons of vodka and 2 tablespoons of cold water. The dough should begin to hold together.
Transfer the dough onto a generously floured surface and roll it out into a circular shape.
Once the dough in rolled out, I roll it around my rolling pin and the unroll it over a deep dish 9'' pie dish. I press the dough down into the plate, cute off the surplus dough, then flute around the sides of the crust. When this is done, set it aside.

Then, in a medium mixing bowl, beat 5 eggs together.
Beat in 1 cup of milk or heavy cream - I used milk.

Mix in 1 1/2 cups of chopped baby spinach.
Cut up 6 pieces of cooked bacon and mix it into the quiche filling.

Grate 1 cup of cheddar cheese and stir it into the quiche filling. Then, mix in 1/2 teaspoon of onion powder, and a little salt and pepper.
Pour the filling into the pie crust.


Bake the quiche for 35-45 minutes at 375 degrees Fahrenheit - I started with 35 minutes, but ended up leaving it in for 45 minutes until the top was beginning to brown. Let the quiche cool and set for a few minutes before cutting and serving!

ingredients
for the pie crust...
1 1/4 cups all-purpose flour
1/2 teaspoon salt

6 tablespoons chilled butter, cubed
1/4 cup chilled shortening, cubed
2 tablespoons vodka
2 tablespoons cold water

for the filling of the quiche...
5 eggs, beaten
1 cup milk or heavy cream (I used milk)
1 1/2 cups baby spinach, chopped
6 pieces of bacon, cooked & chopped
1 cup cheddar cheese, grated
1/2 teaspoon onion powder
salt & pepper, to taste

directions
1. In a medium mixing bowl, start the crust by mixing the flour, salt ans sugar together. Use a fork to press in the chilled butter an shortening. Finally, mix in the vodka and cold water.
2. Once the dough begins to hold together, transfer it onto a generously floured surface and roll it out into a circular shape. Transfer the rolled out dough into a 9'' pie plate. Press the crust down into the plate and cut off the extra dough. Flute around the edge of the crust. Set the pie plate aside.
3. Start on the filling by beating the eggs together, then whisking in the milk or cream.Stir in the chopped bacon, chopped spinach, grated cheddar cheese, onion powder and salt & pepper.
4. Pour the filling into the crust then bake the quiche for 35-45 minutes until the top is beginning to brown.

So easy! And so delicious! Let me know if you try this out!
