Walk Around Taco Salad

I have heard this fun dip called many different things - 7 layer dip (this just makes me yawn), trash (this grosses me out! Who wants to eat trash!?) and Walk Around Taco Salad (it's a mouthful, but I think it's the most fun of the three names I've heard!). So, I'm sticking with Walk Around Taco Salad, but what do you call this dip? Have you heard a different name!?

I don't follow a recipe when I'm making this chip dip. I just layer some yummy taco seasonings in a pyrex dish and call it a day! You can exclude any of the layers or substitute a layer with something you prefer. You could even add a whole extra layer! I love how flexible this dip is and how easily it comes together!

Start by spreading about 1 cup of refried beans across the bottom of an 8x8'' pyrex dish. I think I used about a cup, but I really just use enough to cover the bottom of the dish!

Then, spread  sour cream over the top of the refried beans. Again, I don't really have precise measurements, I just cover the beans!
Top the sour cream with a layer of guacamole - I use my family's favorite guacamole. You can find the recipe HERE. Making the guac makes this whole process a little longer. To save time, you could use store bought guacamole!
Spread some salsa over the top of the guacamole.

Chop up some lettuce and one small tomato. Cover the salsa in lettuce then spread the tomatoes over the lettuce. Spread the tomatoes out as evenly as possible.

Grate about 1 cup of sharp cheddar cheese and sprinkle the cheese over the top of the dip.
Then, grab some tortilla chips and dig in! I recommend covering the dip with plastic wrap and storing it in the fridge until you are ready to serve it!

Refried beans
Sour cream
Sharp cheddar cheese

* I don't use specifically measured amounts - I just use a enough of each ingredient to make a layer! You could easily use a larger or smaller dish, and adjust the amount of each ingredient you use accordingly!

1. Cover the bottom of the dish with a layer of refried beans. Layer sour cream on top of the refried beans.
2. Make guacamole (find the recipe HERE) or use store bought guacamole to layer over the sour cream.
3. Cover the guacamole with a layer of salsa.
4. Chop the lettuce and dice up the tomato. Spread the lettuce over the salsa then evenly distribute the tomatoes over the lettuce.
5. Finally, grate the cheese and cover the top of the dip with cheese.
6. Refrigerate the dip until you are ready to serve it! Serve it with your favorite tortilla chips.

See you tomorrow!
