Friday Favorites: spring, spring, spring!

Hello Friday! April always brings some wild weather and we are experiencing all kinds of crazy - hail, snow, rain, extreme winds! I have to say I love it all though! I am so fascinated by weather so when a hail storm woke me up the other night, I wasn't even a little upset! I happily sat in front of my window for a little to watch the crazy hail fall! And while I am thoroughly enjoying this April weather, I am really looking forward to some sun and warmth! On to my favorites from this week...


1. I picked up this jacket from the Bay right as the Olympics were coming to a close and it is finally warm enough to wear it outside! This is the podium jacket that Canadian athletes wore to medal ceremonies and I am so glad I have one! The Bean came to the Bay with me and we looked everywhere but we could only find extra large men's jackets - ah! I was ready to give up but the Bean started checking mannequins and sure enough she found a medium one! I am so glad she thought to check the mannequins because I have loved wearing this jacket during the warm spring weather!

2. I have three fabulous recipes to share and this is one of them - Snicker's Pie!! Part of the reason I am so excited to share this recipe is that it is completely gluten free, refined sugar free and and vegan! It checks off so many boxes but the taste or look of the final product is not compromised at all! This pie looked impressive and it tasted so darn good! I served it for dessert on Easter and no one even questioned it - it was just dessert! This was an especially big victory me. I thought my dessert days were over but this pie filled me with so much hope! There are many more desserts in my future!I will share this recipe next week!

3. Apparently it has been all about the small victories around here because these gluten free Jamaican patties made me so happy! I made them for dinner last week and they were just okay on the night of but they were spectacular the day after. Once everything congealed overnight they were that much better! I will share more about this when I share the recipe (next week, I promise!).

4. And this is another recipe that I can't wait to share! I made these quesadillas last night for dinner and they were so good! My mom and I had gluten free tortillas with no cheese but the Bean and my Dad had regular tortillas with cheese in the quesadilla! I loved that this recipe was easily converted based on my family's needs and it came together so quickly (20 minute dinners are always good, right!?). I'll share the recipe for these loaded avocado quesadillas (with a gluten free and vegan option!) soon!

5. And last but not least, the end of school is in sight! This semester is coming to an end with numerous final papers and projects but I can see the light at the end of the tunnel! My days are full of writing and proof reading but summer is near and I am so motivated by the impending rest! Also! I just registered for the last two semesters of my Bachelor's degree! What, what!? I know that there is likely grad school in my future but it is so nice to know that I am almost done this first degree!
