Apple Crumble Muffins

I know these are called muffins, but they really are just like cake. These apple crumble muffins are so good, I have been enjoying them as snacks all week!

 The recipe is from a cookbook called Cooking with Love - The Best Recipes from Montreal's Finest Cooks. My batch made 23 muffins but you might be able to stretch it to make 24.
 
Start by mixing together 1 1/2 cup of brown sugar 2/3 cup of vegetable oil in a medium bowl.
 Add in 1 egg and 1 teaspoon of vanilla extract. In a separate small bowl, mix together 2 1/2 cups of all-purpose flour, 1 teaspoon of baking soda, 1/2 teaspoon salt.
Mix 1/3 of the flour mixture into the sugar/vegetable oil/egg/vanilla mixture, then mix in 1/2 cup of buttermilk - mix until just combined.
Mix in another third of the flour mixture, and another 1/2 cup of buttermilk until just combined. Finally, mix in the last third of the flour mixture until just combined.
Peel, core and slice 3 apples - I used 4 apples because two if mine seemed a little small. Fold the apples into the batter. Do not over mix.
Prepare a muffin tin either by greasing it or putting cupcake liners in each cup.
Fill each cup to be about 3/4 of the way full. Then start on the crumble...
In a small bowl, mix together 1 cup of brown sugar and 1/2 cup of softened butter.
Add in 3/4 cup of flour - I needed a little more flour to thicken my crumble.
Then mix in 1/4 cup of rolled oats and 2 teaspoons of cinnamon.
Sprinkle the crumble on the tops of the muffins and place them in the oven to bake for 30 minutes at 325 degrees in Fahrenheit.

Transfer the muffins to a wire cooling rack and let them cool completely before enjoying them!

3 apples, peeled, cored and sliced

for the crumble...
1 cup brown sugar
1/2 cup butter, softened
3/4 cup all-purpose flour (I needed more to thicken)
1/4 cup rolled oats
2 teaspoons cinnamon

directions
1. In a medium mixing bowl, mix together brown sugar and vegetable. Add in egg and vanilla.
2. In a separate small bowl mix together flour, baking soda and salt. Mix in 1/3 of the flour mixture to the vegetable oil/sugar mixture and 1/2 cup of buttermilk until just combined.
3. Add in another third of the flour mixture and another 1/2 cup of buttermilk and stir until just combined. Finally, add the last third of the flour mixture.
4. Peel, core and slice 3 apples, and fold them into the batter until just combined.
5. Prepare a muffin tin either by greasing it or putting cupcake liners in each cup. Fill each cup to be about 3/4 of the way full. Then start on the crumble...
6. In a small bowl, mix together the brown sugar, butter, flour, rolled oats and cinnamon for the crumble. Crumble this mixture evenly over the tops of the muffins.
7. Bake the muffins for 30 minutes at 325 degrees Fahrenheit.
8. once baked, transfer the muffins to a wire cooling rack and let them cool completely before you enjoy!
