Spinach, Avocado Chicken Burgers

This recipe is from Unbound Wellness (you can find the original recipe HERE). These burgers are gluten free, dairy free, egg free, whole 30 & Paleo.

It has been a hot minute since I've blogged three days in a row! Excuse me while I go do a little happy dance. I have been so busy since Christmas; it is so nice to have more free time to blog! Ok, enough chit chat. We need to start talking about this recipe because it is everything you have ever wanted out of a chicken burger and more. These chicken burgers taste ridiculously good and they come together so quickly (like 20 minutes!!).

I have been craving a chicken burger big time, but I had my heart set on a traditional breaded chicken burger. I was curious about this recipe but I really didn't think I would like these burgers. My family was excited about this recipe, so we decided to give it a try. And, let me tell you - I will never eat a traditional breaded chicken burger again. These chicken burgers were incredible. They pack so much flavor, they hold together super well and they make the perfect weeknight meal!

I think I mentioned this in my early blogging days, but I have a serious aversion to raw chicken (and raw meat in general especially when i have to touch it). Because of this, I don't love making burgers. i just don't love messing with raw meat. Well, I'm going to have to get over this pretty fast because I think this recipe will be on repeat in our weekly meal planning. These chicken burgers were well loved by my whole crew!

Honey Dijon Chicken

Today, I'm sharing one of my favorite recipes ever! My Mom has been making this recipe forever and even as a 4 year old, I loved this recipe. This is a recipe that always goes over well in my house and it gets requested over and over again (usually by me). I seriously could eat this every week! Yes, it's delicious but I also love that this recipe is ridiculously easy to put together and it's allergen friendly. This honey dijon chicken comes together super fast and it's free from gluten, dairy, egg and refined sugar - that makes it an especially big win in my house!

This recipe is from The Spruce Eats but we've adjusted over time as we've figured out what works best. So, original recipe is HERE but keep reading to find out how I make it.

Lettuce Wraps (Gluten Free & Dairy Free)

This recipe has been a regular in our house for as long as I can remember. I loved these lettuce wraps as a kid and I still love them just as much! When I made them last week so I could blog the recipe, I was surprised to learn how easy the recipe is. These lettuce wraps some together fairly quickly and they make the most delicious dinner. This recipe could easily be made ahead of time, then kept in a container in the fridge until you need it on a busy weeknight. This recipe also just happens to be gluten free & dairy free - score! No adjustments need to be made with this allergy friendly dinner.

Vegan Mac n' Cheese

I'm back with a recipe today that I am quite literally ready to jump up and down about. I made this vegan mac n' cheese on Sunday evening for dinner and it was such a great surprise. I may or may not have done a little happy dance right at the dinner table. It has been a hot minute since I've had mac n' cheese. I used to love mac n' cheese, but I haven't eaten it in 8 months - ugh 8 months without mac n' cheese! That's why I was happy dancing on Sunday night! And I'm ready to happy dance all over again just sharing this recipe with you!

Let me start by saying this isn't the mac n' cheese we know and love. It's different. This recipe is from a blog called Vegan Yummies (you can see the original recipe HERE) and the author,  Lindsay says it best herself - "We all know that, in reality, not a single one of the vegan cheese alternatives out there tastes like real cheese." This is so true! There just isn't a cheese replacement that really tastes like cheese. All that being said, this vegan mac n' cheese is seriously reminiscent of the real stuff. And regardless of how comparable this vegan mac n' cheese is to regular mac n' cheese; it is SO good! Everyone in my house gobbled it right up - even the Bean! She took a couple bites before saying 'Wait! Are you guys eating real mac n' cheese?" Hahaha I had her fooled for a couple of bites!

Now let me also mention that I am sitting down to right this post after writing 2 academic papers so writing colloquially in this post feels SO strange! If you find some big, vargon-y words thrown into this post we can attribute it to my just having written two 5 page assignments, but I'll do my best to tone down the academic talk!

Slow Cooker Chicken Enchilada Soup

I'm back with another recipe today and this might be the easiest recipe I've ever posted. For real! You just toss some ingredients in the slow cookers and the in a matter of hours dinner is done. On top of being super easy, this recipe is also so good for you! It's dairy free, egg free and gluten free. My favorite thing about this soup is that it's made with Bone Broth. Bone Broth is so good for you but I find it really hard to drink on it's own. Since I can't stomach it on its own I love to find ways to camouflage it in meals. This Slow Cooker Chicken Enchilada soup is perfect for that!

This recipe is from a blog called Real Simple Good. They focus on creating Paleo recipe that include wholesome ingredients. I have tried a few of their recipes and they are all SO good! You can find the original recipe for this Slow Cooker Chicken Enchilada Soup HERE.

Pecan Cranberry Granola Bars (Vegan, Gluten Free & Refined Sugar Free)

These granola bars have become a staple in our house. They're super straightforward to make and they make the most perfect snack! I made some last week thinking we'll eat some throughout the week and have a few leftover to bring on vacation. But, no they're completely gone! Sometimes, I grab one with a smoothie for breakfast and by lunch I'm ready for another one. They're that good!

These granola bars make such a great gluten free, vegan and refined sugar free option to regular granola bars. I used to have a Nature Valley granola bar almost every day in my lunch, but in trying to cut back sugar those granola bars just don't make the cut! If I'm going to eat a treat, I sure don't it to be a granola bar at snack time! These granola bars are naturally sweetened with coconut sugar and honey and they are so easily made gluten free! Not to mention, they use coconut oil and a binder instead of butter, so they're vegan!

Vegan Pesto Sauce

Last summer, I blogged my family's beloved pesto recipe. And I don't say beloved lightly; we could live off pesto around here! The only bummer about our old pesto recipe is that it has Parmesan cheese in it - ugh! When I cut dairy, I was really bummed to miss out pesto! It turns out I don't have to miss out on pesto because there is such thing as vegan pesto! Last week, the Bean helped me put this pesto together and she was eating it straight out of the food processor with a spoon. I told you we could live off pesto! I am all for cleanliness in the kitchen but girlfriend was out of control! She just couldn't get enough - the basil, the garlic, the pine nuts... she was all about it!

We eat this pesto on gluten free pasta, but you could just have it on regular pasta. I'm thinking it would be really good on spaghetti squash too! The recipe is from Food52, you can find it HERE. I followed it to a tee and it was perfect!
We started by heading out to the backyard to pick some basil. We have 3 basil plants growing in our yard, so we went out and picked 2 packed cups. In the past, I've bought basil plants just to make pesto - store bought works just as well as home grown!

Chickpea Curry (Vegan & Gluten Free)

I realize that I probably gush about my favorite dinner recipes a little too often. It's no secret that I love my butter chickpea recipe, but after trying this recipe I think this curry recipe will its place! They are very similar - they are both chickpea curries, they are both vegan and gluten free & they both take about 30 minutes to make. You might want to try both and decide which you like best, but the winner in my house is this new recipe! My whole family loved the butter chickpea recipe but after taking a bite of this recipe we all proclaimed this curried chickpea our new favorite.

My cousin, Andrew sent me this recipe a couple of weeks ago and I couldn't wait to try it! He often tries recipes from my blog and I was so excited to try one from him! This recipe is from Hurry the Food Up, you can find the original HERE.

The original recipe calls for 1 can of chickpeas and says it will serve 3. It does not specify the size of the can of chickpeas but I'm assuming it would be equivalent to 1 1/2-2 cups of chickpeas. I added about 3 cups of chickpeas and was able to serve 4 people at dinner time and have enough leftover for 2 lunches the next day. In my experience this recipe can serve 4-6 people, I will detail what I did below. I opted to use more chickpeas but you can use a lesser amount to better suit the number of people you are serving. I did find that the amount of liquid in this recipe held the extra chickpeas really well.

Walnut Crusted Chicken with Honey Mustard Dipping Sauce

How fun was that post by the Bean yesterday? I was sitting down to write my post and asked her for a song recommendation. Then, next thing I knew she took over! After writing yesterday's post, she's already plotting her next post. There might be a little more Bean around here this summer and I am not complaining one bit!
It was nice to have a little Monday break, but I'm back to share a recipe today! We have been loving this Walnut Crusted Chicken and it's about time I share the recipe with you! The original recipe is from a site called Paleo Running Momma (you can find it HERE) and it is actually called "Walnut Crusted Turkey." No one in my family really loves turkey - we typically only eat it on Thanksgiving and Christmas! With that, I opted to switch out the turkey for chicken. If you love turkey, by all means use turkey! I just wanted to put out a little fyi that there are other options! Onto the recipe!

Bruschetta Quinoa Casserole

My mom has been making this recipe for years (because she's been gluten free a little longer than I have). Recently, we adjusted the recipe to make it better fitted to our needs. So, where the recipe calls for mozzarella and Parmesan, we use vegan mozza and vegan parm. If you have no restrictions dairy wise, go ahead and use regular cheese. I made this recipe for the first time last week and I was impressed to learn that it is easy peasy! There are some steps that are a little more intricate, but it is all totally do-able!

This recipe is from a blog called The Iron You - you can find the original HERE. Let's get on to the recipe!

Loaded Taco Sweet Potato Sliders

Hello, hello! I have another fun recipe to share with you today! These loaded taco sweet potato sliders were pretty darn fabulous! They were absolutely delicious and they made the most perfect Friday night dinner! If we were to merge a taco and a burger the result would be these sliders - they definitely do have a taco-ish taste to them but I totally got burger vibes as well! The tasty combo made such a delightful summer meal! This recipe is from a site called Low Recipe. You can find the original HERE. I strayed a little from the original recipe simply because of what we had in our fridge and it all worked out so well! I'll detail how I made these sliders below!

There are several components to this meal - the baked sweet potato bottoms, the burger, the chipotle ranch, the guacamole, the bacon and I made some potato wedges to serve with the sliders. So lots of different parts that I prepared throughout different parts of the day.

Baked Chicken Fajitas in Lettuce Wraps (Gluten Free, Dairy Free, Whole 30 & Paleo)

I had a different recipe scheduled to go live today - like it was all written and ready to go but after dinner last night I knew I needed to re-arrange my posting schedule a little! This is a fajita recipe that is gluten free, dairy free and egg free (it's Paleo and Whole 30 as well but the gluten free, dairy free and egg free is what is most important to me!) and it is sooooo good! It comes together super easily and the end result is the best dinner ever! I don't say that lightly! These fajitas were so good, I'm ready to have them for dinner every night of the week!

The recipe is from Real Simple Good; you can find it HERE. This fabulous recipe comes together in under 40 minutes and requires very little effort on your part! Considering how spectacular the end result, the prep time is so reasonable!

Start by marinating the chicken - you can marinate the chicken up to 24 hours before you bake it. I marinated mine for about 4 hours and it was great! I recommend letting your chicken marinate for at least one hour.

Zucchini Noodles with Avocado Pesto

This recipe got mixed reviews at my house so I went back and forth in my decision to share or not. Ultimately, I decided to share this recipe because I really liked it! I though the zucchini noodles complimented the avocado pesto really well and it made a delicious dinner! You can find the original recipe HERE. This recipe is a great gluten free and vegan dinner option!

Basil Afredo Spaghetti Squash (dairy free & gluten free)

I made this recipe yesterday and it was love at first bite! To be honest, I loved it before I even ate it! Just from the smell of it while it was cooking, I could tell I was going to love it! You can find the original recipe HERE. This recipe is an A+ on taste but also an A+ on prep time! It comes together so quickly and so darn easily! You'll see as I walk you through the recipe, it's almost too easy (if there is such a thing!).

Okay, let's talk logistics - this recipe is dairy free and gluten free if you make it exactly as I did. If you eliminate the chicken (you could so easily serve it without!), it's also vegan! So, little itty bitty adjustment to make this recipe vegan! Let's get into it!

Loaded Avocado Quesadillas (with vegan & gf option)

I'm sharing another great recipe today and I am equally as excited about this one! Where the Jamaican Patties that I shared yesterday are a little more labor intensive these quesadillas are easy peasy and so delicious! These loaded avocado quesadillas came together in just 25 minutes and they were a big hit all around at my house!

I made this recipe 2 different ways - the Bean and my Dad ate plain quesadillas (with cheese and regular tortillas. But I modified the recipe to make it gluten free and dairy free for my mom and I. I will include the instructions for both recipes below. Let's get started!

Gluten Free Jamaican Patties

I know I bragged about the recipes I have pending on Friday but I'm going to do it all over again today! Mostly because I went to pick which recipe to post today and I was at a loss! Serious first world problem, right? I had the hardest time choosing just one. I really just did eenie meenie miney mo (is there a correct spelling of that?) and today I'm sharing Jamaican Patties! The rest will come in due time (like tomorrow and Thursday!).

This recipe is from a blog called Better Batter - original the recipe was gluten free, but I pulled some strings to also make it dairy free. You can see the original HERE.

Marsala Chicken

Happy first day of March! Tomorrow, is the Bean's birthday and I can hardly wait! I am working on a last minute something to add to her gift today and I will talk about all about her gifts soon! But today, I'm talking about a dinner recipe. I made this Marsala chicken recipe for dinner on Tuesday evening and I was excited to discover how good it was. The process is a little longer, but this is definitely something you can make in advance and warm up when you're ready to eat. I wasn't expecting the Bean to like this (because, mushrooms!) but she pushed them aside and ate it right up! Here is how you can make Marsala chicken too...

Gluten Free Pizza Crust

Today, I'm sharing a recipe for Gluten Free pizza crust. My family tried several gluten free pizza crusts and they were always just ok. We tried cauliflour pizza crust, we tried subbing in gluten free flour into different pizza crust recipes and it was always just meh. Now I should mention that while my mom is completely gluten free, the Bean, my Dad and myself still eat gluten when we're not eating a meal all together as a family. So, we can pretty closely compare the gluten free to the not gluten free. Where we usually notice a big difference, my Mom says that because she's been gluten free for so long, she hardly remembers the real thing and is way more adventurous with gluten free recipes!

Quinoa & Feta Stuffed Roma Tomatoes

I planned to make this recipe a couple of weekend and I went looking for the recipe on my blog. I was beyond shocked to discover that the recipe was no where to be found on my blog! This is one of my favorites, I can't believe it has taken me this long to post this! Let's get started!

Start by cooking 1/2 cup of quinoa in 1 cup of chicken broth or vegetable broth (I use veggie broth). Follow the directions on the package of the quinoa you are using. Once the quinoa is cooked set it aside.

Gluten Free Naan Bread

Today, I'm talking about gluten free naan bread. And I should start by saying that while this recipe worked, it was not the best. In no way was it comparable to real naan bread, but if you are gluten free this is a solid option. I took a regular naan bread recipe and subbed the regular flour for GF flour - did it work? Yes. Am I head over heels in love with this recipe? No. But it tasted good and it worked well with my favorite butter chickpeas! So, just keep all of this in mind should you choose to make this recipe!
