This recipe is one of my all-time favorites! One of my favorite things that my family does at Christmas time is bake (really, we bake all year!) but at Christmas time we bake cookies to give away to our friends, neighbors, and family! We fill little tins with a mix of cookies and deliver them to our favorite people! Well, these peanut blossom cookies are one of my family's favorite to include in our cookie tins!
Start with 1/2 cup of vegetable shortening in a medium mixing bowl.
Mix in 3/4 cup of creamy peanut butter.
Mix in 1/3 cup of granulated sugar...
...and 1/3 cup of brown sugar. Then beat this mixture until it is fluffy.
Mix in 1 egg, 2 tablespoon of milk and 1 teaspoon of vanilla extract.
Add in 1 teaspoon of baking soda and 1/2 teaspoon of salt.
Finally, mix in 1 1/2 cups of all-purpose flour. The dough should form a ball and be solid enough to roll into balls.
Roll the dough into 1 inch balls - I use a tablespoon to measure out my dough.
Once all of the dough is rolled, roll the balls in sugar and place the bals on a baking sheet lined with parchment paper. These cookies spread so you will need leave 1 - 1 1/2 inches between each cookie! Bake the cookies for 8-10 minutes at 325 degrees Fahrenheit.
This recipe makes exactly 30 cookies for me! So, you will need to unwrap 30 Hershey kisses while your cookies are in the oven.
As soon as your cookies come out of the oven, press one Hershey kiss into the top of each cookie.
Let the cookies cool a little before you enjoy them!
And in case you were wondering what I was listening to as I was baking...
A little Heartbeats by José Gonzales & Shelter by Ray Lamontagne! So perfect for a quiet baking night!
