French Silk Pie

I made French Silk pie on Sunday and I had forgotten how delicious it is! I had also forgotten how easy it is! It's the perfect blend of a crunchy/nutty crust with a light mousse filling - yes ma'am!! The recipe is an old one from my family's recipe book but it's a good one!!
Start by making the crust. combine 1/2 cup of melted butter and 1/4 cup of brown sugar in a small mixing bowl.
Mix in 1 cup of all-purpose flour.

 
Finally, stir in 1/2 cup of chopped walnuts.
Then, spread the mixture out over a baking sheet and bake it for 15 minutes at 375 degrees Fahrenheit. Once the crust comes out of the oven, set it aside to cool.
While the crust is cooling start making the filling - Use an electric mixer to combine 1/2 cup of softened butter and 1 1/2 oz of melted unsweetened chocolate. Mix in 3/4 cup of granulated sugar.
Beat in 1 teaspoon of vanilla extract and 2 large eggs or 3 medium eggs, one at a time. Beat for about 5 minutes until the mousse is light and fluffy.

Transfer the cooled crust into a 9'' pie plate and leave aside 1/2 cup of the crust to top the pie with.
You'll need to crumble up the crust quite a bit before you can really push it into the bottom of the pie plate. Once it's crumbled, firmly press it into the bottom of the pie plate.
Pour the mousse filling into the crust and use a spatula to spread it around a even out the top.
Sprinkle the remaining crumble crust over the top and put it in the fridge to chill - it should be ready to serve after about an hour.

ingredients
for the crust...
1/2 cup butter, melted
1/4 cup brown sugar
1 cup all-purpose flour
1/2 cup chopped walnuts

for the filling...
1/2 cup butter, softened
1 1/2 oz unsweetened chocolate, melted
3/4 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs (or 3 medium eggs)

directions
1. Combine the melted butter and brown sugar in a small mixing bowl. Stir in the flour and the chopped walnuts.
2. Spread the crumble over a baking sheet and bake at 350 degrees Fahrenheit for 15 minutes. Set the crumble aside to cool.
3. In a medium sized mixing bowl, beat softened butter and melted chocolate using an electric mixer. Beat in granulated sugar, vanilla and the eggs one at a time. Beat the filling for about 5 minutes until it is light and fluffy. Set aside.
4. Press the crumble into the bottom of a 9'' pie plate - leave 1/2 cup aside to sprinkle on top of the pie.
5. Once the crust is firmly pressed into the bottom of the pie plate, pour the mousse filling over the crust and use a spatula to spread it out and even out the top.
6. Sprinkle the remaining 1/2 cup of crumble over the top of the mousse then put the pie in the fridge to chill for at least 1 hour.
