1. The Bean was really dreading going back to school. While I am the queen of routine, the thought of a monotonous routine makes her stomach turn. She is all about changing it up! She loves spontaneous & unexpected so summer really is her happy place. I switched up the quote on her chalkboard to inspire her to infuse some fun into her routine!
2. Another quote from this week on my letter board! Never have I ever seen a quote that better describes me and everyone who reads the board agrees! I had a friend over on Tuesday and as soon as she spotted the letter board she said "Oh my gosh! That is so you!" I like to have fun but I just can't hang once it gets late!
3. Can we have a moment for Caesar salad? I've grown to love most all salads, but once upon a time, I only ate Caesar salad! When I quit dairy, eggs & gluten in February, I thought my Caesar salad days were over. That is until my Mom found vegan Caesar Salad dressing! What!? Sign me up for that! I made some croutons with gluten free bread and made a Caesar salad that was to die for! There will be many more Caesar salads in my future!
4. Last Sunday marked the 15 year anniversary of Hilary Duff's album Metamorphosis. And why is that momentous to me? Because that is the first CD I ever owned! Isn't that crazy? 15 years ago, my Auntie Norma bought me that very Hilary Duff CD for my 7th birthday and I listened to it nonstop! In fact, I still have it! I don't even have a CD player anymore, but I could never get rid of that album! There will always be a special place in my heart for Hilary Duff music and Metamorphosis got a lot of play on my Spotify this week!
5. Remember these? Gosh some days I really miss gluten! These Jordan Marsh blueberry Muffins are hands down the best muffins I have ever made. I often get asked what my favorite recipe I've posted is and I think this is the winner! If you need an easy muffin recipe that really packs a punch these are for you!
