These paninis have been a go-to in my family for a long time because they are so easy to throw together and require minimal ingredients. We also adore these paninis because it is so easy to make a couple extra to have as lunches for the next day! I should start by saying that I don't really have measurements for this recipe because I have always done it by eye. I hope my pictures give you an idea of about how much I use, but you could play around with ingredients to cater to your tastes.
Start with bread - I have used all kinds of bread in this recipe: baguette, sandwich buns, sliced bread... and it all works! Prep whatever bread you choose to use by cutting it in half.
Then, spread a little pesto on each side of the bread. I would estimate that I use about a tablespoon of pesto on each side of the bread.
Cover the bread with some slices of tomato - I use about a half of a tomato for each panini.
Finally, top the sandwiches with some pieces of mozzarella cheese - I put 5-6 pieces on each panini.
Toast the sandwiches using a panini press for 4 minutes (or until the cheese is melted).
PESTO, TOMATO & MOZZARELLA PANINIS
ingredients
bread (baguette, sandwich buns, sliced bread...)
pesto
tomato, sliced
mozzarella cheese
directions
1. cut the bread in half & spread some pesto over both pieces of the sandwich.
2. Top the panini with tomato and mozzarella cheese.
3. Close the sandwiches and toast them in a panini press for 4 minutes - or until the cheese is melted.
So yummy and so easy! Enjoy!

Turkey, Apple and Brie Paninis
These paninis quick to make and they make a delicious summer meal!
I talked about these baguettes last week. We buy them in bulk from Costco and keep them in the freezer until we need them. I started by warming up 3 baguettes.
While my baguettes were cooking, I sliced up 2 apples and some brie cheese.
When my baguettes were done, I cut them in half width-wise and length-wise.
Then, I spread a little bit of strawberry jam on all of the pieces of bread. I am really cautious to put a very little bit of strawberry jam because I don't want it to be the most powerful flavor in my paninis.
Then I layer 2 slices of turkey, 3-4 pieces of brie and 4-5 slices of apple on the bottom piece of each bread. I put the top on the sandwiches and put the in the panini press for 5-7 minutes or until the brie cheese is melted.
I love these as paninis because once the brie melts it kind of holds everything else together. But, if you don't have a panini press, or would prefer not to use a panini press, you could just eat these as cold sandwiches.

Sliced Turkey
Sliced Apple
Brie cheese
Directions:
1. Cut the baguettes in half, length-wise and width-wise. Spread a thin layer of strawberry jam onto the cut pieces of baguette.
2. Layer 2 slices of turkey, 3-4 pieces of brie and 4-5 slices of apples on each baguette.
3. Close the sandwiches and press them in the panini press for 5-7 minutes, or until the brie cheese melts!
