Banana Bread

When I first started a blog, I wrote a list of recipes on a tiny little post-it note that I knew I wanted to share at some point. I started a blog on a major whim, which is so out of character for me. I'm a major planner, so having that little post-it full of recipes settled my mind big time! This is one of the first recipes that I wrote down and I am so excited to be sharing it over a year later!

This is a recipe that my mom has been making for my entire life - I think I was stirring banana bread for her before I could form coherent sentences! It's definitely a favorite of mine because of its familiarity but also because it is so easy to make! In fact, it is so easy that I only had to take 5 pictures of the process! Here is how we make banana bread in my house...





Start by mashing 3 ripe bananas in a medium mixing bowl and mix in 1 beaten egg. 


Once the bananas and eggs are combined, stir in 1 cup of sugar and 1/4 cup of melted butter.


Then, mix in 1 1/2 cups of flour, 1 teaspoon of baking soda, 1 teaspoon of baking powder and 1/2 teaspoon of salt.

*Since my mom has gone gluten free, she switches out the regular flour for gluten free flour. We have found that some brands work better than others, but the end result is always totally bearable!


When the better is well combined, pour it into a baking dish. I have never actually measured the baking dish that we use and you can notice that I have two different dishes pictured. The picture above is gluten free banana bread and the picture below shows regular banana bread! I think our glass pyrex dish is about 8'' by 4''.


Preheat the oven to 375 degrees Fahrenheit and bake the banana bread for 15 minutes at that temperature. After 15 minutes at 375, reduce the oven temperature to 325 and bake the banana bread for another 35 minutes. Test the banana bread with a knife - it should come out clean. If not, put it back in the oven for 5 minute increments until an inserted knife comes out clean.

BANANA BREAD
ingredients
3 ripe bananas, mashed

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
 
directions
