Pear, Apple & Caramelized Onion Grilled Cheese

This is a recipe that I found over the summer on The Roasted Root (you can find it HERE). I finally made it a couple of weeks ago and the bagels were so good! They were so messy - you will definitely need napkins on the table but they were absolutely delicious! I made a couple changes from the original recipe. Here is what I did:

Start by caramelizing the onions. Slice 1 medium yellow onion. Heat 2-3 Tablespoons of olive oil over medium heat before sauteing the onions in the oil. When the onions become translucent sprinkle a little sea salt over them and reduce the heat to medium-low. Continue cooking the onions until the are golden brown. You should be stirring the onions occasionally as they are cooking.
I started by cutting 4 bagels in half - I used four but you could adjust this number to fit the number of people you are feeding! The bagel on the far right is a gluten free bagel! I love that you can adjust this recipe to fit your needs! Place the bagels on a baking sheet and under the broiler for about one minute or until they are golden brown.

Place cheddar cheese on both sides of each bagel and return the bagels under the broiler for another one to two minutes - until the cheese is completely melted.
Transfer the bagels from the baking sheet to a plate. Once on the plate, top the bagels sliced apples, pears and the caramelized onions. I left three of the bagels like this - melted cheese, pear, apple and caramelized onion! But, on the fourth bagel, I added...
A sunny side up egg - this is recommended in the original recipe, but only my dad was interested in having egg on his grilled cheese!
Put the top on the bagel and slice it in half then it is ready to go! It came together pretty quickly and the end result was spectacular! There was so much flavor in these bagels! In the future I am interested in finding a mans of adding a little protein to these grilled cheese (since not everyone loves egg!) and I would love to try them with a little strawberry jam on the bagels - I think that would take this right over the edge!

I love how flexible these bagels are! You can omit any of the ingredients and swap them out for something else (or not!) if necessary! What kind of fun flavors would you add to this grilled cheese?

PEAR, APPLE, CARAMELIZED ONION GRILLED CHEESE

ingredients
4 bagels
2-3 Tablespoons olive oil
1 medium onion, sliced
Cheddar Cheese, sliced to fit on the bagels
1 apple, sliced (I used a royal gala apple)
1 pear, sliced
4 eggs, sunny side up

directions
1. Heat the olive oil in a medium frying pan over medium heat. Once the oil is hot, saute the onions in the pan. When the onions become translucent, sprinkle a little sea salt over them and reduce the heat to medium-low. Continue cooking the onions until they are golden brown and caramelized. Set the onions aside until you need them.
2. Cut the bagels in half and place them open along a baking sheet. Put the bagels in the oven under the broiler for about 1 minute so that the bagels are golden brown.
3. Remove the bagels from the oven, place slices of cheddar cheese along both sides of each bagel. Put the bagels back under the broiler for 1-2 minutes until the cheese is completely melted.
4. When the bagels come out of the oven, transfer them from the baking sheet to a plate and top half of each bagel with sliced pears, sliced apples, caramelized onions and a sunny side up egg. Close the bagel, cut it in half and it's ready to go!
