Homemade Hummus

I don't know if I've ever been as excited to post a recipe as I am to post this hummus recipe! Hummus is something that I really eat all the time - I love having it with pita and with veggies! It makes such a great snack! I'm so used to cooking and baking that the end product doesn't always excite me, but this hummus had me so excited! It was so fun to make and the end result packs a little more flavor than store bought hummus.

Add 1/4 cup of tahini and 1/4 cup of freshly squeezed lemon juice (this should be the juice from about 1 lemon) to the bowl of the food processor. Process the lemon juice and tahini together for 1 minute. Then stop the food processor, scrape down the sides of the bowl and process the mixture again for about 30 seconds. The tahini should appear whipped.

I used store bought tahini, but I have heard that you can make your own tahini. However you choose to do the tahini, I recommend stirring it well before adding it to the food processor.
Once the tahini and lemon juice are whipped, add 1 small clove of garlic, 2 Tablespoons of extra virgin olive oil, 1/2 teaspoon of cumin and 1/2 teaspoon if salt. Process for 30 seconds, scrape down the sides of the bowl then process for another 30 seconds.
Open, drain and rinse one 15 ounce can of chickpeas (or 1 1/2 cups). Add half of the chickpeas to the food processor and process for about a minutes. Scrape down the sides of the bowl and add the second half of the chickpeas. Process the hummus together for 1-2 minutes until the mixture is smooth.

*Make sure the chickpeas are cooked before you add them to the food processor! :)

The hummus will likely be very thick after the chickpeas are added, you can resolve this by adding 2-4 Tablespoons of water. Start by adding 1 Tablespoon and continue to add until the hummus is at your desired consistency.

Store the hummus in an air tight container in the fridge - it should last for about a week! I can't wait to make this homemade hummus with my homemade pita bread! If you are interested in doing the same, you can find my pita bread recipe HERE.

HUMMUS

ingredients
1 15oz can chickpeas (or 1 1/2 cups) - make sure the chickpeas a re cooked!
1/4 cup lemon juice, fresh
1/4 cup tahini
1 garlic clove
2 Tablespoons extra virgin olive oil
1/2 teaspoon ground cumin
1/2 teaspoon salt
2-4 Tablespoons water

directions
1. Process the tahini and lemon juice in the bowl of a food processor for 1 minute. Scrape down the sides of the bowl and process for another 30 seconds - the tahini should appear whipped.
2. Add the garlic, olive oil, cumin, salt and process together for 30 seconds. Scrape down the sides of the bowl with a spatula and process for another 30 seconds.
3. Drain and rinse the chickpeas and add half of them to the bowl of the food processor. Process the chickpeas in for 1 minute.
4. Add in the second half of the chickpeas and process the hummus together for 1-2 minutes until it is smooth.
5. The hummus will likely be very thick. Add in the water one tablespoon at a time until it has reached your desired consistency.
