Orange & Blueberry Loaf

I'm back! I still feel a little foggy, but I think I'm on the mend! I am so excited to be sharing a delicious loaf recipe with you today. This loaf is so easy to put together but so delicious! It's the kind of thing you could whip up before some guests arrive - it comes together so quickly. The longest part is waiting for it to come out of the oven!

Start with 3/4 cup of brown sugar and 1/4 cup of white sugar. Mix the sugars together in a medium mixing bowl.

Mix 1 3/4 cups of all-purpose flour and 2 teaspoons of baking powder into the sugars. Once the flour, the baking powder and the sugars are well combined, form a well in the center of the bowl.
Add all of the wet ingredients to the center of the well -  2 eggs, 1/2 cup of vegetable oil, 1/4 cup orange juice, the zest of one orange and 1 teaspoon of vanilla extract.
Mix in the wet ingredients. Stir until just barely combined.
Then, add in 1 cup of frozen or fresh blueberries (I used frozen this time, but in the summer, I would likely use fresh). Fold the blueberries into the batter. Then, transfer the batter to 8''x4'' baking dish that has been prepped with cooking spray.
In a separate, small mixing bowl combine 2 Tablespoons of brown sugar and 1/4 teaspoon of cinnamon with a fork.
Sprinkle the cinnamon sugar on top of the batter and bake the bread for 40-45 minutes in an oven that has been preheated to 350 degrees Fahrenheit. I needed to put the loaf in for 5 minutes longer (so, 50 minutes total). Be sure to check the loaf with a butter knife when you take it out of the oven. The loaf is ready when the butter knife comes out clean.
Easy, right!? And so delicious! Let the loaf cool for about 30 minutes in the pan before transferring it to a wire cooling rack or putting it on a plate to serve!

ORANGE & BLUEBERRY LOAF

ingredients
3/4 cup brown sugar
1/4 cup granulated sugar
1 3/4 cups all-purpose flour
2 teaspoons baking powder
2 eggs
1/2 cup vegetable oil
1/4 cup orange juice
zest of one orange
1 teaspoon vanilla extract
1 cup blueberries (frozen or fresh)

topping
2 Tablespoons brown sugar
1/4 teaspoon cinnamon

directions
1. Combine the sugars, the flour and the baking powder in a medium mixing bowl. Once combined, make a well in the center of the dry ingredients.
2. Add the eggs, the vegetable oil, the orange juice, the orange zest and the vanilla to the center of the well. Stir the contents of the mixing bowl together until the batter is just barely combined.
3. Fold in the blueberries.
4. Prepare a 8''x4'' baking dish with cooking spray and pour the batter into the dish.
5. In a separate bowl, combine the topping. Mix the brown sugar and the cinnamon together until well combined. Then, sprinkle the cinnamon sugar on top of the batter.
6. Let the loaf cool for about 30 minutes before transferring it to a wire cooling rack or putting it onto a plate to serve!
